Easy Truffle Mayonnaise Recipe

If you’ve got a stick blender and 30 seconds, you’ve got gourmet truffle mayonnaise. This is one of those recipes that feels fancy but couldn’t be easier — and the best part? You can swap the flavour and create endless variations.
Ingredients
- 2 whole eggs
- 1 1/2 cups plain oil (vegetable, sunflower, rice bran or canola)
- 1 tsp Dijon mustard
- 1 small clove garlic
- Salt + pepper (to taste)
- 1 tbsp lemon juice
- Tiny pinch of white sugar
- 10 drops Oil-soluble truffle flavouring
Method
Add everything into a wide-neck glass jar (so your stick blender fits).
Place the stick blender at the very bottom of the jar.
Turn it on and slowly lift it up and down.
Within about 30 seconds, it will emulsify into a thick, creamy mayo.
That’s it — done.
