How to Use concentrated Flavouring to Make Hard Candy & Lollipops

Create bold, delicious hard candies and lollipops using premium flavour concentrates from Universal Flavours.

Our food-safe, highly concentrated flavours are perfect for high-temperature candy-making — offering vibrant taste without affecting your candy’s texture or clarity.

What You’ll Need:
  • Any concentrates from our range
  • Granulated sugar
  • Light corn syrup or glucose
  • Water
  • Candy thermometer
  • Candy moulds or lollipop sticks (optional)
  • Food colouring (optional)
  • Heat-resistant gloves and utensils

Step-by-Step Instructions:

1. Prepare Your Candy Base

In a heavy saucepan over medium heat, combine:

  • 2 cups sugar
  • 2/3 cup light corn syrup
  • 3/4 cup water

Stir until sugar dissolves, then stop stirring. Clip on your candy thermometer and let it boil until it reaches 150°C (300°F) — the hard crack stage.

2. Add Flavour and Colour

Once the mixture reaches 150°C, immediately remove from heat. Let the bubbling settle briefly, then quickly add:

Stir quickly but carefully. The mixture is extremely hot! Adding flavour concentrates (that are not oil soluble) to mixtures above 150°C can cause flavour degradation.

3. Pour Into Moulds

Pour the hot syrup into lightly greased candy moulds or onto a silicone mat. Add lollipop sticks if desired. Let cool completely (about 30 minutes).

4. Wrap and Store

Once cooled and set, wrap candies in cellophane or store in airtight containers to avoid moisture.
