Oil-Soluble Flavours Vs Water Soluble Flavours for Chocolate?

Traditionally, oil-soluble flavour concentrates are preferred when flavouring chocolate.

Chocolate is naturally high in fat from cocoa butter, so oil-based flavourings blend more easily into the chocolate without affecting its texture. Oil-soluble flavours are designed to disperse evenly through fats and oils, making them ideal for applications such as:

While oil-soluble flavours are traditionally recommended, small amounts of water-soluble flavour concentrates can also work in chocolate. In our own testing, we have added small quantities of water-soluble flavours to melted chocolate and experienced no separation, with the flavour blending successfully into the chocolate.

What You’ll Need:

3–6 drops Oil-soluble Flavour Concentrate
(FlavorWest Raspberry, LorAnn Orange Oil)
½ cup cocoa butter or coconut oil
½ cup cocoa powder
¼ cup icing sugar or powdered sugar
1 tsp vanilla extract
pinch salt

How to Use Flavouring to Make Chocolate

Flavouring chocolate is simple, but timing and technique are important.

Step 1: Melt Your Chocolate

Melt chocolate slowly using either:

  • a double boiler, or
  • a microwave in short intervals

Avoid overheating the chocolate, as this can affect the final texture.

Step 2: Add Oil-soluble Flavour Concentrate
Once the chocolate has melted and cooled slightly, add a small amount of oil-soluble flavour concentrate.

Because flavour concentrates are highly potent, only a tiny amount is needed to achieve the desired flavour, which reduces the risk of affecting the chocolate’s texture.

Step 3: Mix Thoroughly
Stir the flavour evenly through the chocolate to ensure consistent taste throughout the batch.

Step 4: Taste and Adjust
If needed, you can add slightly more flavour until the desired intensity is reached.

Step 5: Pour and Set
Pour the flavoured chocolate into moulds, trays, or over baking paper to set.

This technique works perfectly for:
