How to Use Flavouring to Make Macarons
Bring your macarons to life with bold, delicious flavours using premium flavour concentrates from Universal Flavours.
- Flavour Concentrates from Universal Flavours (TFA, Capella, FlavourArt, LorAnn, and more)
- Macaron shell ingredients (egg whites, almond meal, icing sugar, caster sugar)
- Filling ingredients (buttercream, ganache, jam, or cream cheese frosting)
- Food colouring (optional)
- Piping bags and nozzles
- Mixing bowls and stand mixer
- Baking trays with parchment paper or silicone mats
Step-by-Step Instructions:
1. Make the Macaron Shells
Follow your preferred French, Italian, or Swiss meringue macaron recipe. Only use water-based or PG-based flavour concentrates in the shell to avoid affecting texture.
- Add 1–3 drops of flavour concentrate to your whipped meringue mixture before folding in the almond meal mixture.
2. Make Your Filling
Prepare a buttercream, ganache, or cream cheese-based filling.
Flavouring Ratio: Use 1/4 to 1/2 teaspoon of concentrate per cup of filling. Mix well and adjust to taste.
3. Assemble the Macarons
Once the shells have cooled completely, pipe your flavoured filling onto one shell and sandwich it with another.
4. Mature for Best Flavour
Place assembled macarons in an airtight container in the fridge for 24–48 hours. This allows the flavours to meld and the texture to perfect.
Why Choose Universal Flavours Concentrates?
- Concentrated Formulas: A few drops go a long way, perfect for delicate pastries.
- Food-Safe & Professional Grade: Trusted by chefs and patissiers.
- Wide Range of Flavours: From fruit and floral to dessert and nutty notes
- Compatible with Fillings and Shells: Flexible use depending on your recipe.
- Use minimal liquid to preserve shell structure — add flavours to meringue, not almond mix.
- Let macarons mature for at least 24 hours for full flavour development.
- Pair flavours creatively — combine fruit with spice, floral with citrus, etc.
- Avoid oil-based flavours in shells (they can deflate meringue); use in fillings only.
