Oil Soluble vs Water Soluble — Which Do I Need?
Oil Soluble: Designed for fat-based applications — chocolate, compound coatings, cocoa butter, fat-based ganaches, and oil-containing products. Will not seize or bloom chocolate.
Water Soluble: Designed for water-based applications — beverages, gummies, baked goods, and most standard food applications. Do not use water-soluble concentrates in chocolate.

Recommended Usage Rates
Chocolate and fat-based applications: 0.25% – 1% (taste and adjust — chilli heat builds; start low)
Culinary oil applications: 0.1% – 0.5%
