Oil Soluble vs Water Soluble — Which Do I Need?
Oil Soluble: Designed for fat-based applications — chocolate, compound coatings, cocoa butter, fat-based ganaches, and oil-containing products. Will not seize or bloom chocolate.
Water Soluble: Designed for water-based applications — beverages, gummies, baked goods, ice cream, and most standard food applications. Do not use water-soluble concentrates in chocolate.

Recommended Usage Rates
Chocolate and fat-based applications: 0.5% – 2% (taste and adjust — oil-soluble concentrates can be more intense)
Buttercreams and fillings: 0.5% – 1.5%
